I got a nice note the other day from a guy who wants to eat more veg but only knows how to grill…how do you cook vegetables?
Well, that was easy. Step one (from my editor at Workman)…if you’re grill guy, just toss some veg on the grill itself, drizzle some olive oil on em and there you go.
But almost all veg are easy to cook. I love beets, carrots and string beans in particular. Carrots, just peel, slice up and boil in hot, lightly salted water. For a kick, make up a little bowl of chopped ginger and melted butter (sorry)…,mix over cooked carrots. Don’t cook em too long…al dente like spaghetti. More to come if you’re interested.
